using baby spinach leaves, any old eating apple, cheap olive oil (not too strong) and also feta cheese. We used the PDO feta. We don’t normally get feta, but it’s nice.  The apple and walnuts were stir-fried for a minute with the cooked bacon, before tossing with the spinach leaves and feta, and the heat made the leaves a little bit wilted,rather than cooked, taking the virtue out. A dash of olive oil dressed it.  It tasted very extremely delicious and John and I both liked it.  I served it with posh bake-at-home sourdough bread, butter and proper coffee.
