Now all I have to do is empty out the liquid (there is some, not much), admire the darker colour of my piece of pork (but I did use dark brown sugar, so it should be dark), and rub in one fifth of the remaining cure mixture.  We did this roughly by eye, dividing the dish of cure up into imaginary fifths, and spooning one of the fifths into another bowl.  Sam insisted on doing all the rubbing.  His granddad would be proud…
